The Un-Pancake.

Our family is working hard to find new, healthy alternatives for our old (unhealthy) favorites.

While I was pregnant, I struggled with a lot of morning sickness and ended up falling in love with french toast.

The habit has been hard to break, especially when we’ve been waking up with chilly weather on the weekends.

I’m totally in love with this recipe for “pancakes.”

  • 1 banana
  • 1 egg + 1 egg white
  • 1-2 T oatmeal

I blend them up, and then fry tiny spheres in oil for a minute per side.

Instead of having maple syrup, I fry up some frozen blueberries and top the cakes with them.

They are warm, sweet and filling. Having something that takes care of a craving in a healthy and satisfying way is pretty amazing.
