I might be a little obsessed with zucchini. To be fair, it is one of the few vegetables that all three of us really enjoy.
Last week, I made a really awesome delicious, crowd pleasing, healthy meal.
I sliced the zucchini really thin, and then drizzled it with a bit of oil before broiling in the oven for 7-10 minutes a side.
Then, I topped them with some tomato sauce and a bit of shredded cheese. I threw on some ricotta, and banana peppers.
It was so pretty, and delicious. A total mom win.
